[01:07:04] <TheMightyBuzzard> oh my god. fried catfish, fried okra, fried taters, and iced tea. my stomach is in southern heaven.

[01:27:21] * TheMightyBuzzard waves at mrpg
[01:27:56] <mrpg> backwave to you, good night
[02:07:29] <Sulla> Id be interested in trying some of that southern food
[02:07:39] <Sulla> Hard to find it in the liberal west
[02:07:54] <Bender> [SoylentNews] - The Greatest Leap, Part 1: How the Apollo Fire Propelled NASA to the Moon - http://sylnt.us - this-IS-rocket-science
[02:12:15] <TheMightyBuzzard> Sulla, thing about southern food is it's easy to make yourself.
[02:12:44] <TheMightyBuzzard> like there's nothing i ate tonight that isn't a few minutes of prep work and dropping it in some hot oil.
[02:13:02] -!- Sulla has quit [Quit: Bye]
[02:13:16] -!- Sulla [Sulla!~Sulla@qiwkbr-870-335-848-90.mycingular.net] has joined #Soylent
[02:14:18] <Sulla> Never been good at deep frying or frying in general
[02:14:25] <Sulla> Really hate oily substanced
[02:15:06] <TheMightyBuzzard> catfish: take cornmeal, salt and pepper it to taste, drop a wet catfish fillet in it, shake, remove fillet and drop in 350F oil, when it floats take it out.
[02:16:00] <TheMightyBuzzard> okra: same thing but swap okra for fish fillets and flour for cornmeal.
[02:16:30] <TheMightyBuzzard> on okra you're looking for light brown rather than floating though.
[02:18:29] <TheMightyBuzzard> if you really just want some southern food though: biscuits and gravy.
[02:18:40] <Sulla> Interesting, was unaware it floats when done
[02:18:43] <Sulla> Why
[02:18:46] -!- mrpg has quit [Remote host closed the connection]
[02:18:51] <TheMightyBuzzard> why which?
[02:19:13] <Sulla> Why floats
[02:19:24] <Sulla> I do like making biscuits and gravy
[02:19:36] <TheMightyBuzzard> really dunno. probably cause enough water got cooked out of it to lessen the density.
[02:20:08] <Sulla> Makes sense
[02:20:25] <TheMightyBuzzard> you can let it go like a minute, maybe two once it's properly floating but much longer and it gets rubbery. previous to floating it's sushi.
[02:20:44] <Sulla> Good to know, ill have to pick up some frozen catfish
[02:21:05] <Sulla> How does catfishing work? Local streams have a bunch of channel cat
[02:21:36] <Sulla> Time of day/bait/weather
[02:21:47] <TheMightyBuzzard> put something disgusting on a treble hook, drop it to the bottom, tighten up the line, wait.
[02:22:11] <Sulla> Recently gotten into crawfishing which is delicious
[02:22:21] <TheMightyBuzzard> generally early mornings or nights are best but it fluctuates. some days it'll be noon when they bite best.
[02:22:26] <TheMightyBuzzard> yes. yes it is.
[02:22:56] <TheMightyBuzzard> plus i dunno about you but i can eat crawfish until i get tired of eating crawfish without getting stuffed.
[02:23:01] <Sulla> Usually a weekend or two a year some buddies and I go crawfishing then feast while playing dnd and smoking cigars.
[02:23:03] <Sulla> Yeah
[02:24:17] <TheMightyBuzzard> for catfish you can use like a million kinds of bait. chicken liver's an old favorite but i make dough bait out of flour, whole wheat flour, hot dogs i put through a cheese grater, some garlic powder, and water.
[02:24:36] <Sulla> Ill give it a shot
[02:24:42] <TheMightyBuzzard> cheap, easy, and does not stink to high hell
[02:24:46] <Sulla> Is it a year round kind of thing?
[02:24:51] -!- mrpg [mrpg!~m@Soylent/Staff/Editor/mrpg] has joined #Soylent
[02:24:51] -!- mode/#Soylent [+v mrpg] by Aphrodite
[02:25:04] <TheMightyBuzzard> better any time but the winter but they bite year round.
[02:25:32] <TheMightyBuzzard> like i shall be running jug lines in february and catching fish.
[02:25:45] <Sulla> Good to know
[02:25:50] <Sulla> Ill have to give it a shot
[02:26:33] <TheMightyBuzzard> yarp. rivers is good fishing for them sometimes. lakes as well but you gotta be in the right part of the lake and where that is changes as the weather does.
[02:26:47] <Sulla> Need to find some streams not around the cropping as im sure there is chemicals from the dusting
[02:27:33] <TheMightyBuzzard> wouldn't sweat that overly much. catfish are quite adept at eliminating toxins. they have to be with the shit they eat.
[02:28:28] <TheMightyBuzzard> cleaning them is the hard part and the main reason i occasionally skip a day of fishing.
[02:28:40] <Sulla> Eh ive seen those wells catfish out of chenoble's cooling pond
[02:29:44] <TheMightyBuzzard> gotta gut them first, then peel the skin off with pliers, then either fillet them or leave the bones in and just cut the head off.
[02:30:02] <TheMightyBuzzard> i fillet them cause fish bones is painful surprises.
[02:30:54] <Sulla> Probably do them fillets, learned pain of bones from trout
[02:31:31] <TheMightyBuzzard> yup yup. if you're an epic badass with a filleting knife, you don't have to skin them first. i'm not.
[02:32:19] <TheMightyBuzzard> there's guys that can get the fillet off then run the knife between the meat and the skin without losing any meat but they're much better than i am.
[02:35:09] <Sulla> You play civ six at all?
[02:35:15] <Sulla> Civilization*
[02:35:32] <TheMightyBuzzard> nah. never got into them. pirates! was his finest work IMO.
[02:35:43] <Sulla> Kek

[02:35:51] <Bender> karma - themightybuzzard: 309
[02:36:49] <TheMightyBuzzard> oh, if you ain't been clued in to it yet... old fisherman's trick for saving fish: put em in a container/zip-lock bag/whatever, fill it up with water, get all the air out, freeze.
[02:36:57] <TheMightyBuzzard> no freezer burn.
[02:37:01] <Sulla> Interesting
[02:37:08] <Sulla> Wouldnt that more freezer burn
[02:37:25] <TheMightyBuzzard> nope. the air pulling the moisture out of the meat causes the burn
[02:37:25] -!- mrpg [mrpg!~m@Soylent/Staff/Editor/mrpg] has parted #Soylent
[02:37:59] <Sulla> Much interesting
[02:38:07] <TheMightyBuzzard> no air and the meat being surrounded by water = years and years of storage if necessary.
[02:38:21] <Sulla> Very intrigue. Ill try that
[02:38:58] <TheMightyBuzzard> works with any meat technically but fish meat is uniquely suited to being in water.
[02:39:32] <TheMightyBuzzard> wouldn't try it with hamburger
[02:39:45] <TheMightyBuzzard> pirates++
[02:39:45] <Bender> karma - pirates: 3
