[03:10:55] <SirFinkus> the key is to season it liberally with salt and pepper (I also drizzle with a little olive oil and rub some minced garlic in) and leave it at room temp for an hour or so
[03:11:52] <SirFinkus> the salt draws out the moisture from the outer layer allowing you to get a good crust
[03:11:54] <SirFinkus> and letting it sit for a while makes sure the center isn't cold

[03:14:12] <SirFinkus> I think where most people fuck up is trying to cook cold steaks

[03:14:27] <SirFinkus> it's hard to overdo it on salt
[03:15:39] <n1_> there's generally no reason not to season, unless you do have a really good cut
[03:16:33] <SirFinkus> even then you need salt and pepper

[03:17:35] <n1_> it does take it to the next level for sure
